This reminds me of the cafeteria cake we got when I was younger. It is really simple but really delicious. The chocolate icing is just perfect with the cake and it is probably my favorite part.
White Texas Sheet Cake
Ingredients:
- 2 c. flour
- 2c. sugar
- 1/2 t. baking soda
- 1 t. baking powder
- 1/2 t. salt
- 2 sticks butter or margarine
- 1 c. water
- 1/2 c. sour cream
- 2 eggs
- 1 t. vanilla or almond extract
Icing:
- 2 stick butter or margarine
- 1/4 c. milk
- 4-1/2 c. powdered sugar
- 1/2 t. vanilla or almond extract
- 1 c. walnuts, chopped (optional)
- 1/3 c. unsweetened cocoa (if you want chocolate icing)
Directions:
Preheat oven to 375°.
Grease a 15x10x1 baking pan.
Whisk the first five ingredients together in a large bowl.
Bring the water and butter to a boil, remove from heat.
Stir this into flour mixture.
In a separate bowl, whisk together the eggs, sour cream and extract until blended.
Whisk this into the flour mixture until smooth.
Pour into the prepared pan.
Bake 20 – 25 minutes until lightly brown.
Cool on a wire rack 20 minutes.
For icing:
Boil the butter, milk, and cocoa (if using) in a large saucepan, remove from heat.
Stir in powdered sugar and extract.
Fold in walnuts.
Spread over warm cake.
