Oh, man are these good! I saw a recipe for something similar posted earlier in the week and had to give these a try.
I used some regular Russet Potatoes, which I cut in half, but I think they would be great with red potatoes as well.
Smushed Taters
Ingredients:
- 6-8 potatoes, washed well
- 1/2 stick butter, melted
- Olive oil
- Salt and pepper (We like Lawry’s Garlic Salt)
- Other seasonings, as desired
Directions:
Preheat oven to 400.

Grease a large baking sheet.

Make sure the potatoes are washed well and place in a pot.

Cover with water and boil 20-30 minutes until fork tender.
Drain well and place on baking sheet.

Smash slightly with a potato masher…

Or a fork.

Drizzle with olive oil and then butter. Sprinkle with seasonings and bake 20-30 minutes.

You can place them under the broiler for a few minutes if you like.
Enjoy!

For loaded potatoes, you can top with sprinkled cheese, chives, and bacon bits. Broil 5-10 minutes.
