Cauliflower and Cheese (Keto alternative to Macaroni & Cheese)

I love my macaroni and cheese and that has been a hard thing to give up but this recipe is just about as good as the real thing… Mr. Awesome says he actually prefers it to the real thing.

Cauliflower and Cheese (Keto alternative to Macaroni & Cheese)

Ingredients:

  • 1 head of cauliflower or 24 oz frozen cauliflower
  • 1/4 stick butter or margarine
  • 1-2 T. almond or coconut flour
  • 1.5 c. milk or almond milk
  • ½ t. dry mustard (can substitute prepared mustard)
  • ½  t. garlic salt
  • ½ t. seasoned salt
  • ¼  t. black pepper
  • 1 c. shredded cheddar or cheddar blend
  • 2 oz cream cheese
  • ½  c. parmesan
  • sliced tomato, optional

Directions:

Cook your cauliflower as desired, steamed or roasted. I prefer to roast it for about 10-15 minutes at 350. Drizzle with a little olive oil and sprinkle with some garlic salt and pepper before roasting.

Melt the butter and whisk in the flour. Cook 1-2 minutes and then whisk in the milk. Cook until mixture thickens slightly, stirring frequently.

Whisk in the seasonings (mustard through pepper) and simmer over medium heat for 1-2 minutes.

Stir in the cheeses until melted. Remove from heat.

Carefully add the cooked cauliflower to the sauce and stir until coated.

Sprinkle with extra parmesan cheese if desired.

You could also transfer this to a greased 9×9 pan and top with sliced tomatoes.

Place under the broiler for 3-5 minutes until lightly browned, if desired.
