Cheesy Garlic Skillet Biscuits

Mmmmm…. these were so good. The idea for these came about as I had forgotten to take the rolls out for my Cheesy Garlic Pull-apart Bread to go with dinnerWe’d had a very busy day dealing with ants.

I happened to have some canned biscuits (and mozzarella cheese sticks) in the fridge from the weekend. I had planned to use the biscuits for Monkey Bread on Saturday but as that is one of William’s favorite breakfasts and he wouldn’t have been able to eat it I chose not to make it.

Smushed Taters

Oh, man are these good! I saw a recipe for something similar posted earlier in the week and had to give these a try.

Quick and Easy Burrito Casserole

This is a recipe that I’ve had for a while and I’ve tweaked it a bit here and there to get it to our liking. I’ve actually had it on the menu plan for the past couple of weeks but haven’t been able to make it as we’ve just had some hectic schedules here lately.

You can call the kids in to help with this one. My littles like to tear up the tortillas and sprinkle on the cheese while the girls like helping to stir the meat and bean mixture and spread the sour cream. We all put a lot of time and effort into being good parents, and training our kids in life skills and mealtime manners is part of it – but it can be hard to know just where to start. I often feel like just giving up on getting everyone to eat what I fix without asking for something different.
