Oatmeal Raisin Cookies

I can’t believe that I haven’t posted this recipe before now, but I guess I just overlooked it. I found it when I was searching for some other cookie recipes for our upcoming Polar Express Party.

You could even make these with/without raisins and add a layer of buttercream icing between two cookies for an oatmeal cookie pie!

Oatmeal Raisin Cookies – Makes about 48 cookies

Ingredients:

  • ¾ c. butter or shortening
  • 1 ¼ c. brown sugar or a combination of brown and white sugar
  • 2 eggs
  • 1 t. vanilla
  • 1 ½ c. flour
  • 1 t. baking soda
  • 1 t. cinnamon
  • ½ t. salt
  • 1 c. raisins or other dried fruit
  • 3 c. quick or old-fashioned oats, uncooked

Optional:

  • 1 c. chopped walnuts
  • 1 c. chocolate chips

Directions:

Preheat oven to 350 degrees.

Cream together the butter and sugar until light and fluffy, then add the vanilla and eggs.

In a separate bowl, combine the dry ingredients together, except the oatmeal and raisins, and mix well.

Add the dry ingredients to the butter mixture, mix well.

Stir in the oatmeal, raisins, and any optional ingredients, mix well.

Drop by tablespoonfuls onto an ungreased cookie sheet or a silicon-lined cookie sheet.

Bake for 8-10 minutes. Let cool for 1-2 minutes and transfer to a cooling rack.

These may also be made into bars by baking in an ungreased 9 x 13 pan for 30-35 minutes. Let cool and cut into bars of desired size.
