Oh my golly! I can’t believe I hadn’t posted this before. I guess I just thought everyone knew how to make sweet tea but I have been asked for the recipe several times in the past couple of weeks.

This can vary a great deal on taste so adjust the sugar accordingly. I am just posting the measurements we use here. We also make 2 gallons at a time as it seems to evaporate rather quickly, just kidding, it doesn’t evaporate but it does disappear really quickly. Continue reading “Susie’s Sweet Tea”

April 16-22, 2017 Meal Plan

This is our basic meal plan for the week. Sometimes we will switch the days around if I forgot to set something out or put something in the crock pot. Please feel free to use this or change it around to suit your family’s needs.

I have started trying to do easier meals on days that I have square dancing obligations. This helps me to be able to put a nice meal on the table without feeling guilty about having some much needed ‘Mommy Time’. Some of these meals may also help with those that have busy or irregular schedules due to work or extracurricular activities.

I do have ‘Snacks/Desserts’ listed as well. I always try to keep a bowl of fresh fruit out on the counter or table for the kids to snack on. Sometimes I will make a special snack or treat for us to enjoy.

Sunday

Breakfast:

Bird Nests, Grits, Fruit

Lunch:

Tuna Salad Sandwiches, veggies

Dinner:

Easter Dinner (We have opted to do a cookout this year. )

Snacks/Desserts:

Coconut Cake

Pickled Eggs


Monday

Breakfast:

Cereal/Oatmeal

Lunch:

Hot dogs, Veggies

Dinner:

Red & White Pasta, SaladCheesy Garlic Pull-apart Bread

Snacks/Desserts:

Cinnamon Toast


Tuesday

Breakfast:

French Toast

Lunch:

PB & J, fruit

Dinner:

Crockpot Tortellini Soup, 30 minute Rolls

**(Crockpot Meal as Momma has a class in the evening)

Snacks/Desserts:

Cupcakes (** I will try to make a few extra to take along for refreshments later.)


Wednesday

Breakfast:

Basic Muffins

Lunch:

Scrambled Eggs Sandwiches, veggies

Dinner:

Root Beer Slow Cooker Pork, French Fries, Cole Slaw

Snacks/Desserts:

Muffins


Thursday

Breakfast:

Pancakes

Lunch:

leftovers

Dinner:

Chicken PillowsMashed Potatoes, Veggies (maybe a vegetable casserole?)

Snacks/Desserts:

Fruit


Friday

Breakfast:

Cereal/Oatmeal

Lunch:

Egg Salad, veggies

Dinner:

Sweet and Sour Meatballs, Macaroni and Cheese, Veggies

Easy Donut Holes (again I will try to make a few extra to take along for class.)


Saturday

Breakfast:

Cheese Danish, scrambled eggs, fruit

Lunch:

Soup, grilled cheese

Dinner:

Smothered Burgers, Chips, Salad

Snacks/Desserts:

Cake

Smothered Burgers

This is a favorite of ours. You can change the ingredients around or use premade hamburger patties, if you like. These can get a little messy so be sure to have plenty of napkins around.

Smothered Burgers

Ingredients:

  • 2-3 lb. ground beef
  • 1 pack Lipton onion soup mix
  • hamburger buns
  • swiss cheese, sliced (optional)
  • 1 large onion, thinly sliced
  • 1-2 c. mushrooms, sliced
  • 1 c. water or beef broth
  • 1/4 c. water mixed with 1 T. cornstarch
  • 1 T. mustard (I like to use Dijon)
  • 1 T. soy sauce
  • salt and pepper, to taste
  • olive oil
  • small amount of butter or margarine (optional)

Directions:

Mix together the ground beef and soup mix until mixed well. Shape into patties and cook as desired. Place on buns, top with cheese, and leave the tops off the buns for now.

In a skillet (you can use the one from the burgers if you made them inside) heat the olive oil and a small amount of butter until hot.

Add in the onions and mushrooms and cook until tender. Remove from the pan and set aside.

Add the water or broth to the pan and use a whisk to scrape up any bits on the bottom of the pan. Add the soy sauce and mustard. Season with salt and pepper, if desired.

Once this mixture is hot and bubbly whisk in the water and cornstarch to the pan. Heat 2-3 minutes until thickened.

Add the cooked mushrooms and onions back to the pan. Cook 1-2 minutes until heated through.

Ladle a small amount this mixture over the cooked burgers, add the top of the bun, and ENJOY!
