Cheesy Garlic Bread Sticks

This is a new take on an old recipe that I’ve had. The kids (and myself) love breadsticks. I especially love the Cheesy Bread from Hungry Howies. This may not be quite as good but my kids don’t complain and neither do I as it is much easier than driving 20-30 minutes one way for an order.

Spicy Chicken Breast Caprese w/pasta

This is a super delicious dish that I love to make. Sometimes I will sprinkle little extra pepper flakes on mine but I try to keep it fairly mild for the kids.

I serve this over pasta, usually a thin spaghetti or angel hair, and with a salad on the side. Whatever your favorite pasta is would be fine though. Continue reading “Spicy Chicken Breast Caprese w/pasta”

Chicken & Cheese Enchiladas

This is not the most authentic enchilada recipe but my kids really enjoy these. Pair it with a salad or rice and beans to make a complete meal. Continue reading “Chicken & Cheese Enchiladas”

Black Bean Soup

Beans are usually fairly cheap and we like to eat them so I try to include them every week or every other week. The leftovers can be used up during the week for a variety of other things or they can be frozen for later.

You can cook them pretty much like Pintos but sometimes I like to add a few extras to them. Continue reading “Black Bean Soup”

Chicken Pillows

This is a recipe that I have adapted from the Real Mom Cookbook. I love mushrooms and I love these. I usually saute the rest of the mushrooms from the pack and serve them with dinner. You could probably use canned mushrooms but I prefer to buy fresh ones.

The original recipe also has a sauce that goes with it but my kids don’t like the sauce and prefer to eat with their hands whenever they can. These are also great to make for parties or get-togethers. Continue reading “Chicken Pillows”
