January 29-February 4, 2017 Meal Plan

This is our basic meal plan for the week. Sometimes we will switch the days around if I forgot to set something out or put something in the crock pot. Please feel free to use this or change it around to suit your family’s needs.

I do have ‘Snacks/Desserts’ listed as well. I always try to keep a bowl of fresh fruit out on the counter or table for the kids to snack on. Sometimes I will make a special snack or treat for us to enjoy.

This week I have a couple of new/old and forgotten recipes to try. I will mark them with a ** so you will know which ones they are.

Sunday

Breakfast:

Eggs w/Creamy Bacon Grits, Toast

Lunch:

leftovers

Dinner:

Black Bean Soup, Rice, Cheddar Muffins

Snacks/Desserts:

** Easy Apple Dumplings (this is one we haven’t had in awhile)


Monday

Breakfast:

Cereal/Oatmeal

Lunch:

PB & J sandwiches, fresh fruit

Dinner:

Chicken & Cheese Enchiladas, Spanish Rice, Beans

Snacks/Desserts:

Popcorn


Tuesday

Breakfast:

French Toast

Lunch:

Egg salad sandwiches, veggies

Dinner:

Breakfast for Dinner (Backwards Day)

Snacks/Desserts:

** Lazy Dazy Cookie Cake (this is one we haven’t had in awhile)


Wednesday

Breakfast:

Muffins

Lunch:

Grilled cheese, fresh fruit or veggies

Dinner:

** Spicy Chicken Breast Caprese w/pasta, Salad (this is one we haven’t had in awhile)

Snacks/Desserts:

Muffins


Thursday

Breakfast:

** Cinnamon Roll Pancakes (NEW)

Lunch:

Chicken Salad, sliced tomatoes & cucumbers, lettuce

Dinner:

** Crockpot Taco Soup, Rice, Tortilla Chips (this is one we haven’t had in awhile)

Snacks/Desserts:

Fruit/Veggies


Friday

Breakfast:

Cereal/Oatmeal

Lunch:

PB & J sandwiches, fresh fruit

Dinner:

** Gorgonzola Pasta w/Mushrooms, Salad, Cheesy Garlic Bread Sticks  (this is one we haven’t had in awhile)

Snacks/Desserts:

** Fried Apple Pies  (this is one we haven’t had in awhile)


Saturday

Breakfast:

PB & Banana Toast, scrambled eggs

Lunch:

Tuna salad sandwiches, fresh veggies

Dinner:

** Easy Chicken Casserole, Mashed Potatoes, veggies (this is one we haven’t had in awhile)

Snacks/Desserts:

Boiled Eggs

tuna salad sandwiches, fresh veggies

Mom’s Oven Stew, 30 minute rolls, Rice

Friday

hot dogs, mac n cheese, veggies

Dinner:

Free Day **use food from the pantry or freezer or order out for a special treat

Snacks/Desserts:

Sopapillas


Saturday

Breakfast In a Cup, Toast

Lunch:

Egg Salad Sandwiches, veggies

Dinner:

Weenie Roast, S’mores, Potato Salad….fixins…. (We do this every 3-4 months when the weather is nice. If it’s not nice outside I will usually cook the hotdogs on an indoor grill and make S’more in the microwave.)

Mashed Potatoes

Mmmmm… I love homemade mashed potatoes. I use my hand masher to make mine but feel free to use a mixer, if you like. You can adjust the milk, butter, and seasonings to get these to your liking. Sometimes we use red-skinned potatoes and leave the skins on for something just a little different. We also like to add a few sauteed onions when we do this… yummy!

Need an alternative to mashed potatoes? Try these Super Yummy Caulitaters… many of our kids actually prefer these over regular mashed potatoes now!
