Pumpkin Honey Pancakes
This is a brand spanking new recipe in our house! It came about after I made some Pumpkin Muffins for our Pantry Challenge week. I was trying to use up some of the frozen pumpkins I had in the freezer. My 3-year-old fell in love with them and he insisted that on Thursday, Pancake day, we needed Pumpkin Pancakes.
He was up bright and early Thursday morning to help Momma. We made our basic Pancake recipe and then added the pumpkin. Added a little spice and it needed to be sweetened so he suggested some honey. (Yesterday was Winnie the Pooh day and we know what he loves to eat.) Below is the recipe that we came up and they were delicious! Continue reading “Pumpkin Honey Pancakes”
Boston Baked Beans
I forgot where I got this recipe from but I will gladly give credit if I find my original source.
We usually eat this one day for dinner with Mac-n-Cheese, Slaw, and Rolls. Then we will eat them the next day for lunch. Continue reading “Boston Baked Beans”
Fried Cabbage
I love fried cabbage. We usually eat Cole Slaw but sometimes I just want something different. You can play around with this and add some cooked ground meat and canned tomatoes to make it a meal of its own. Continue reading “Fried Cabbage”
Tortilla Bowl Taco Salad
This is a meal that my special needs son enjoys helping me with. He really likes to eat it as well. I try to let the kids help with certain meals and this one is ‘his’ meal. It helps them to feel a sense of accomplishment when they are able to do things independently. I do have to supervise with a lot of the oven part but other than that he really enjoys helping to put the bowls together.
You can add your favorite toppings to it and make it the way you like it. With individual bowls, each family member can customize their own bowl. Serve it with rice and beans.
Note: We do have a set of ovenproof bowls that we use to shape the tortilla bowls themselves but you can check out this link for ideas to make them without a bowl. Continue reading “Tortilla Bowl Taco Salad”
