Crockpot Cream Cheese Chicken

This is a great way to use up leftover chicken and it is a family favorite too! I wasn’t too sure about it when I first made it several years ago but my oldest son fell in love with it. We usually eat it over a bed of rice but you can also eat it over noodles, Cauli-Rice, or even spaghetti squash… yum!

We love to serve this with Cole Slaw and rolls or homemade bread with butter… so good!

Cole Slaw

This is as close as I can get to my exact recipe. I just kinda eyeball my ingredients as I pour, dump, and taste. I like mine a little sweet but with a little tang to it also. You can adjust the sugar and vinegar to suit your own taste. Continue reading “Cole Slaw”

January 15-21, 2017 Meal Plan

This is our basic meal plan for the week. Sometimes we will switch the days around if I forgot to set something out or put something in the crock pot. Please feel free to use this or change it around to suit your family’s needs.

I do have ‘Snacks/Desserts’ listed as well. I always try to keep a bowl of fresh fruit out on the counter or table for the kids to snack on. Sometimes I will make a special snack or treat for us to enjoy.

Popover Pizza

This is a favorite of my second oldest. It is pretty simple to make and you can add a variety of meats and/or toppings to it to make it even better. I usually serve this with a simple salad to complete the meal. Continue reading “Popover Pizza”

Easy Banana Pudding

This is an easy dessert that my whole family loves, especially grandpa. There are so many different variations of banana pudding that I usually just make it the easiest way I can.

The kids really enjoy helping to put this together and sometimes add a few sprinkles to the top to make it extra special. They can slice the bananas with a butter knife and layout the vanilla wafers. I just have to keep an eye on them to make sure they don’t eat all of the cookies. I also like to put the pudding mix and milk in a container with a tight lid and let them take turns shaking the pudding. Continue reading “Easy Banana Pudding”
