Cheddar Muffins

Cheddar Muffins (not sure where I found this recipe)
Makes 12
Ingredients
•1 1/2 cups all-purpose flour
•2 cup sharp cheddar cheese, grated
•1 cup 2% milk
•1/4 cup unsalted butter
•1 egg
•1 tablespoon baking powder
•1/2 teaspoon salt
•1/4 teaspoon cayenne
•1/4 teaspoon freshly ground pepper

Directions
1.Preheat oven to 375º F and spray muffin tin with non-stick spray.
2.In a large bowl, mix together the egg, milk and butter.
3.In a separate bowl, combine the flour, baking powder, salt, pepper and cayenne.
4.Slowly whisk the dry ingredients into the wet ingredients and fold in cheddar cheese.
5.Fill your muffin tins 3/4 full with batter and place baking tin in oven.
6.Bake for 20-25 minutes, or until toothpick inserted in center comes out clean.
7.Remove from oven and let cool for 10-15 minutes. Serve warm.

Better Than Boxed Muffins

Basic Muffins (I do not remember where I got this recipe from but will give credit when I remember.) Blueberry muffins are the favorite here at our house.

I often double the recipe so we will have some muffins for snacks later in the day.

Sometimes I add about 1/2 c of sourdough starter to the batter and let it sit overnight in the fridge , then I add any add-ins just before baking. Continue reading “Better Than Boxed Muffins”

Breakfasts

Breakfast is the most important meal of the day. During the week we have a schedule that we go by:

  • Mondays: Cereal/Oatmeal
  • Tuesdays: French Toast
  • Wednesdays: Muffins or Toast
  • Thursdays: Pancakes
  • Fridays: Cereal/Oatmeal

This helps keep the morning chaos to a minimum as there is no fussing about what we will be having.
