Special Holiday Meals: Groundhog Day Meal

Happy belated Ground Hog’s Day… I had written this post but just didn’t get it published in time but here it is!

The kids have been excited to learn that Phil predicted an early spring and they have been helping to make a special meal to celebrate!

We’ve got some ‘Woodchuck Pie’ aka Shepherd’s pie and some of Phil’s Pepper Poppers as a side. We’ve also got some fresh sourdough to eat alongside it. I’ll try to get the recipe for the peppers on the blog soon!

For dessert they’ve made some dirt cakes with Nutter Butter ‘Groundhog’s’… so cute! These are in little disposable cups as we have a dance later and they’ll be taking the desserts along with us for the refreshment table. We used edible glue to attach the little eyes but a dab of frosting would’ve worked too.

It’s nice to make special little memories with our kids. We also learned a little about Candlemas and the origins of Groundhog Day during our schoolwork.

It was also National Wear Red Day and some of us managed to do that but some of us didn’t but we’ll try better for next year 🙂

We pray you all have a great weekend!
