Chicken and Dumplings w/variations
This recipe is a favorite around here and I have recently update the recipe as it has become a craving for some of the expecting mamas in the family. Some of them prefer more broth and some prefer a thicker soup base… customize as you will, it’s always delicious. It’s also a go-to for when we are sick!
You can any vegetables that you like… this is a good way to use up turkey leftovers and any celery laying around after Thanksgiving… just sauté the celery with the onion and use turkey in place of the chicken. You can also throw some parley in there if you happen to have any laying around.
Tip: Use chicken with the skin-on and bone-in for extra vitamins!

Breaded Pork Chops
Ingredients:
- 2/3 c. bread crumbs
- 2 t. seasoned salt or garlic salt
- 1 t. black pepper
- 8 boneless pork chops, 1/4 inch thick
- 1 c. flour
- 4 eggs, lightly beaten
- 4 t. olive oil
Directions:
Place breadcrumbs in a shallow dish.
Sprinkle salt and pepper over both sides of pork chops.
Place flour in a shallow dish; put beaten eggs in another shallow dish.
Dredge chops in flour, then dip in eggs, and then in breadcrumbs.
Heat the oil in a large skillet, add pork chops and cook for 2-3 minutes each side, or until lightly browned.
Serve with Baked Sweet Potatoes or Super Yummy Caulitaters and a green veggie!

Slow Cooker Baby Back Ribs
Ingredients:
- 3 pounds baby back ribs
- salt and pepper to taste (we like to use mineral salt or Lawry’s garlic salt)
- 1/2 c. broth
- 1 onion, sliced
- 1 clove garlic, minced
- 1 (18 ounces) bottle barbeque sauce
Directions:
Sprinkle the ribs with salt and pepper.
Pour water into the slow cooker.
Place the ribs into the slow cooker. Top with onion and garlic.
Cook on High for 4 hours or Low for 8 hours.
Preheat oven to 375.
Once cooked, transfer ribs to a baking sheet. Discard onion and garlic. Coat ribs with barbeque sauce.
Bake 10 to 15 minutes.
