Shepherd’s Pie in a Skillet

This recipe is fairly simple and easy to put together. You could leave off the French Fried Onions if you like. I might also try it with some shredded cheese the next time I make it.

If you don’t have an ovenproof skillet you could transfer the meat mixture to a 9×13 greased casserole dish and bake.

** I have been informed that it is technically a ‘Cottage Pie’ as it does not contain lamb… but you could make this with ground lamb if you like. Continue reading “Shepherd’s Pie in a Skillet”

Southwestern Produce Company

Update:

We have been using this company for over 2 years now and we love them even more than we first did! This is a great way to stock up on healthy options and save money too!

This is a company I had recently heard about and really wanted to try. Well, this past weekend we did pick up our order of veggies and I will say that I am very pleased!

I’ve been really busy this year and we didn’t put out a garden so being able to get farm fresh produce was a real treat. It looks just as good as if I had gone to the work of growing it and putting it up myself. Best of all the freezer is pretty well stocked for the next couple of months and hopefully, we will have enough frozen veggies to supplement the fresh ones I find until we can place another order. Oven Roasted Green Beans

Well, now that I have all of these frozen green beans in my freezer I can start using them in many different ways. One of the ways we really like to eat them is oven-roasted… the little kids think of them as bean fries.

You can add in the parmesan and breadcrumbs if you like or leave it out if cheese is not your thing. You could also substitute bacon drippings for the olive oil and sprinkle them with some crumbled bacon to take these to another level.

If you buy or pick whole green beans they do make for a prettier presentation but we use a lot of frozen green beans as we get them at a really good price from Southwestern Produce.

Markdown Meals: Chicken Salad on Croissants

I don’t like to go grocery shopping but I always look for deals when I do.

I happened to pass by the deli section and found these rotisserie chickens marked down to $2.01! I’m not sure what they normally sell for but I grabbed two of them. One Traditional and one Lemon Pepper. I had also snagged a package of mini croissants on the markdown cart for less than $3.00.

Today I used the traditional chicken to make Super Easy Chicken Salad croissants. I served these with some cherry tomatoes on the side for a quick lunch.

Here is the recipe: Continue reading “Markdown Meals: Chicken Salad on Croissants”
