No-Bake Eclair Icebox Cake

I love eclairs and I remember our 5th Sunday church dinners and someone would ALWAYS bring this delicious dessert along. It is so easy but everyone will LOVE you for bringing it!

Note: It tastes best if you can let it sit in the refrigerator overnight. Also, if you warm the frosting for a few seconds in the microwave it will make frosting the cake easier.

You will need to use the Apple Pie Filling For Canning for this recipe or maybe check out this recipe for Apple Crisp in a Crockpot. I’ve never tried this with store-bought apple pie filling but it might work as well.

Angel Food Cake

I can remember the first time I made this recipe… I was so proud of myself because it turned out so well. The recipe scared me because it seemed to go against everything I had learned about baking… a cold oven and an ungreased pan. I’ve had this recipe for quite some time and I believe it came out of a very old cookbook that we had in the kitchen when I was growing up.

This is really rather simple to make and you can save the egg yolks to throw in some scrambled eggs for breakfast. This is extra delicious when you pair it with some fresh strawberries but I think any fruit would probably be good with it.
