Ham and Cheese Sliders on Sweet Rolls

This is one of our favorite go-to recipes when we go camping. I love to make these ahead of time in foil pans with covers. They can be easily reheated over the campfire or in an oven if you aren’t roughing it.

These are always a hit when I take them to covered dishes and other get-togethers as well. I thought I had posted the recipe before but I can’t seem to find it so here it is again. You could probably use some other small roll if you can find the sweet rolls.

Quick and Easy Burrito Casserole

This is a recipe that I’ve had for a while and I’ve tweaked it a bit here and there to get it to our liking. I’ve actually had it on the menu plan for the past couple of weeks but haven’t been able to make it as we’ve just had some hectic schedules here lately.

You can call the kids in to help with this one. My littles like to tear up the tortillas and sprinkle on the cheese while the girls like helping to stir the meat and bean mixture and spread the sour cream. A Special Christmas Treat

Ok, so I’m not entirely sure what the real name for this should be but this is the name we came up with last night. Papa D has been talking about this dessert that his Granny would make and how much he enjoyed it and would love to have some. The only problem was no one had the recipe nor did anyone know the real name for it.

When he explained it to me I thought it sounded similar to the Blackberry Dumplings my mom-mom always made. Yummmmmmmy! So for the past few months, I have been researching and trying to find this mysterious recipe. I’ve gone through some of my old cookbooks and then looked online too. Earthquake Cake

This is a dessert I’ve had a couple of times since I started square dancing. I love it… I mean it’s full of rich chocolatey goodness and layered on top of coconut and pecans… yum! Don’t plan on bringing home leftovers if you take this to a potluck though.
