Cinnamon Toast

Cinnamon Toast

Cinnamon Toast

Ingredients:

  • 2 slices bread
  • butter
  • 1 T sugar (I have been using Stevia or Monkfruit in place of the sugar)
  • 1 t. cinnamon

Directions:

Mix together cinnamon and sugar. Toast your bread, butter it, sprinkle with cinnamon/sugar mixture.

I usually keep an old, clean, parmesan cheese shaker full of cinnamon sugar.

Use 2 T cinnamon to every 1/2 c sugar to make it in larger batches.

Chicken Mexicana

My kids really love this meal too. It can be made as a freezer meal also. If you are feeling up to it you could double the batch and eat one for dinner tonight and put one in the freezer for later. Serve with yellow rice and black beans. Continue reading “Chicken Mexicana”

Better Than Boxed Muffins

Basic Muffins (I do not remember where I got the original recipe from but will give credit when I remember.) Blueberry muffins are the favorite here at our house.

I often double the recipe so we will have some muffins for snacks later in the day.

You can increase the sugar, if they aren’t sweet enough for your liking or add a little honey or maple syrup. You can also replace the oil with butter or applesauce to make them a little healthier.

Sometimes I add about 1/2 c of sourdough starter to the batter and let it sit overnight in the fridge , then I add any add-ins just before baking.

Easy Pancakes and Waffles

In our house Thursdays are always Pancake Days. Waffles are usually saved for weekends as they take a little bit longer to make. For special occasions top these with Blueberry Syrup and whipped cream.

This will make about 8-10 pancakes and 6-8 waffles. I usually double or triple this recipe to feed my crowd.

(I am not against using mixes either because I know that mornings can be hectic. Our favorite is the Krusteaz brand of pancake and waffle mixes.) Continue reading “Easy Pancakes and Waffles”

French Toast

We have this almost every Tuesday morning. I double this and sometimes triple it to feed my hungry crowd. I also use an electric griddle to cook them on so I can make bigger batches. These are good with blueberry syrup and whipped cream also. Continue reading “French Toast”
