Life Updates – February 2024

February was a short month but we had a lot of stuff packed into it. We’ve been working really hard this past month and we have the sore muscles to prove it. We made a lot of progress in a lot of areas and we are pretty proud of all that we have accomplished… our family is a great team!

I’ve put together a few pictures to show some of what we’ve done over the past month.

Victory Gardening for a Homeschooling Win

I have written a little about Victory Gardens in past posts but recently I went so far as to incorporate them into our homeschool curriculum!

We used the booklet found HERE to calculate how much food we would need as individuals and for the family as a whole. Then we calculated how many rows of each vegetable we would need to supply those needs.

Using those numbers we were then able to calculate how much space we would need for a Victory Garden that would supply us with the majority of the fruits and veggies that we would need to give us an adequate amount of nutrition. Guacamole

This recipe is so easy I didn’t even have it written out… I only had a list on my phone of the items I needed, no measurements or anything but I figured I should probably jot it down just in case my memory fails me or my phone gets dropped in the toilet. This is a must-have for taco nights!

Perpetual Meal Plan – Spring 2024

I’ve been working a little too hard on getting these meal plans ready but the effort has definitely paid off. I won’t go into a lot of detail but this is the same format as the Winter Plan but with a few different recipes to change things up. You’ll also notice that I’ve added some other features toward the end like a seasonal produce guide, Breakfast/Lunch Ideas, Themed Dinner Calendar, and a Big Batch/Freezer Cooking idea list and planner. These are all things that have been helping to keep our home running a little more smoothly through all the stuff we’ve been doing around here between house remodeling projects, taking care of animals, adding on to our garden, and just LIFE.

Stuffed Acorn Squash

With grocery prices skyrocketing around here, I’ve really been trying to shop for some of the cheaper produce even if we’ve never tried them before. Last week I picked up a couple of acorn squash… I mean we do like most squashes so I figured we would like them too.

I’m sure there are a ton of ways that these could be prepared but I just couldn’t pick a recipe so I went with something similar to what I’ve done with other squash before.
