Grandma’s Mac N Cheese w/low carb alternative

Now I do confess that in years past I used boxed macaroni and cheese a lot because: 

  1. it’s cheap
  2. it’s easy
  3. I was too tired to make the real deal

However, I did try to make this recipe every so often and on special occasions and/or holidays. You can add a little ham or meat to make this a hearty main dish!

Things have changed over the years and we rarely buy the boxed stuff anymore at all. We’ve even adapted this for our low-carb eating and that recipe is below.

Crockpot Taco Soup

A friend invited me over for lunch one day and served this wonderful concoction. I’m not sure if this is close to her recipe or not but this stuff is good, really good. You can also make this on the stovetop if you don’t have a crockpot.

Black Bean Soup

Beans are usually fairly cheap and we like to eat them so I try to include them every week or every other week. The leftovers can be used up during the week for a variety of other things or they can be frozen for later.
