Orange Kefir Smoothie

I don’t know if you have gotten in on the Kefir craze or not but we’ve been drinking it for a bit now and we love it! The slight tang reminds me a bit of buttermilk and we weren’t really crazy at first but now we can’t seem to get enough of it.

The kids are especially fond of their water kefir but we make and use a lot of milk kefir as well. We were doing a lot of different smoothies but the kids got a bit bored with my lack of creativity until recently.

Adorable Chicken Cakes

I know I’ve posted these pics before but I thought I’d share some of the progress pics when I was making these… I forgot to take pics while making the second cake and the cupcake but they were super simple! These were inspired by Pinterest!

I made these for little miss’s birthday but these would be super cute for Easter as well!

I also forgot to take an up close picture of the picture of the little caterpillar but it was just some green fondant balls with a couple of candy eyes and antennas (flower stamens) added. I probably should’ve use red but Isabella picked out these pink ones.

Easy Sourdough Fruit Cobbler with sugar-free options

I’m trying to stay away from sugar as my body doesn’t seem to like it very much and I’ve been incorporating a lot of sourdough into our meals so this was a creation I came up with.

Top it with some sugar-free caramel syrup and a scoop of vanilla ice cream for a delicious treat!

In the photo, I put the cobbler dough on top but it also works well if you want to spread the dough on the bottom of the pan first and put the fruit on top.

Easy Sourdough Fruit Cobbler with sugar-free options

This makes enough for an 8×8 pan.

Ingredients:

Filling:

  • 1-2 c. fruit, chopped or sliced
  • 1/4-1/2 c. Monkfruit ( I like to use the golden for this recipe) or sugar or brown sugar

Dough batter:

  • ¼ c + 2 T all-purpose flour
  • ½ t. baking powder
  • ¼ t. baking soda
  • A good pinch of salt
  • 3 T. butter
  • ½ c. sourdough starter or discard

Topping: (optional)

  • 1 T. melted butter
  • 1 ½ t. Monkfruit or sugar

Optional toppings:

  • Ice cream
  • Caramel sauce
  • Whipped cream

Directions:

Preheat oven to 350. Place 3 T. butter in pan and set in the oven to melt.

Mix the fruit and sweetener together and set to side.

Combine the flour, baking powder, baking soda, and salt together. Mix well.

Add in the melted butter from the pan and the sourdough starter. Stir just until combined.

Add the fruit or batter to the pan and then add the other to the top.

Drizzle the butter on top, if desired and then sprinkle with sweetener.

Bake 30-45 minutes or until golden brown.

Serve warm or cold with ice cream and toppings, as desired.

Easy Fruit Cobbler with sugar-free options

We’ve been gifted several boxes of peaches over the last couple of weeks so we’ve been making quite a bit of cobbler as well as putting some away in the freezer. I’m hoping to make some peach butter or preserves too.

This is really good with a drizzle of caramel sauce and a scoop of vanilla ice cream.
