Eema’s Easy Chili

This is so easy to make… I don’t know why I haven’t posted the recipe sooner, but here it is!

You could just add the meat, beans, and tomatoes for a basic chili, but the seasoning really does make it so much better! Using fresh onion and garlic, add a little something special, as well as using the bacon to add flavor. You could even add a can of corn for a little extra crunch.

This goes especially well with Hoe Cakes, Cornbread, or even Garlic Bread and a side of rice. It would also make a great topping on baked potatoes or baked sweet potatoes… the possibilities are endless! You can even leave the beans out and make this for hot dogs or add it to your leftover macaroni and cheese to make chili mac-n-cheese!

When my older kids were younger, we would often turn this into ‘Cowboy Chili’ to use up any leftovers we had in the fridge! We would add bologna, ham, or even hot dogs to the meat or in place of the meat, and then throw in any leftover veggies to cook down with the beans… it always turned out delicious!

Creamy Cabbage and Sausage

This dish is so unbelievably good and it’s easy and quick to make as well. I made it in the crockpot but it could come together quickly in a skillet as well. I had originally had Kielbasa and potatoes on my menu but I wanted to change it to something that Mr. Awesome and I could eat on our ‘diet’… this was the perfect dish to replace our old favorite!

I didn’t get any pictures as it just didn’t last long enough to take pictures. We ate this with a pot of ‘Get Methylating Soup‘ (lentils), riced cauliflower, and some fresh-picked Rosella greens… yum! I think the next time I might make some veggies other than the soup though. Fried potatoes and macaroni-n-cheese go really well with this dish.

Colds, a collapsed well, and some deep cleaning

It’s New Year’s Eve and I, along with many others, will be glad to be putting 2020 behind me. It was a rough year in so many ways. We did have quite a few good things that came from it, like our beautiful baby girl, but it seemed like something new and even more ominous was lurking behind every corner.

Cocoa In A Crockpot

Just another recipe I found floating around in my Holiday Binder… we love to serve Hot Cocoa when we have a Polar Express Party and this is one of the recipes I have used in the past although we normally prefer to use our Hot Cocoa recipe. This one is super simple and delicious though.

Try serving it with some Chocolate-Dipped Goodies for an extra special treat!
