2019 Meal Plans

These are some of our most recent meal plans after converting some of our favorite recipes to be healthier with inspiration from Trim Healthy Mama. I find it easier to plan out my meals so I can make fewer trips to the grocery store. I always hate it when it’s almost dinner time and I have no idea what I should make. A little planning goes a long way to help me keep my sanity… well what’s left of it that is.

I also find it easier to go ahead and plan a day or time to prep some of the items ahead of time instead of waiting until the last minute. I will boil eggs, cook chicken and ground beef, prep veggies and all ahead of time so that when it comes time to make dinner it seems to go so much easier.

When I have time I also try to make a couple of extra batches of our favorites so I can put some in the freezer for emergency or quick meals. I’ll try to include some tips and tricks along with the menu plans to make your life a little easier too.

Haystacks aka Noodle Cookies

As promised I will share the recipe for the cookies we made earlier today. These are super easy to make and I had made two batches, or about four dozen cookies, in less than 30 minutes.

I’ve always called them haystacks but Mr. Awesome knows them as Noodle Cookies. You can probably add other ingredients, desired or maybe even swap the butterscotch chips for chocolate ones.

Mr. Awesome likes them without marshmallows but with plenty of peanuts. The kids like them with marshmallows. That’s how I ended up making two batches.

Haystacks aka Noodle Cookies

Haystacks aka Noodle Cookies printable recipe

Ingredients:

  • 11-12 oz bag butterscotch chips (you can also use semi-sweet chocolate chips)
  • 3/4 c. Peanut butter
  • 10-12 oz Chow Mein Noodles
  • 1/2 – 1 c. Salted peanuts, optional
  • 3 1/2 c. Mini marshmallows, optional

Directions:

Line two baking pans with wax paper.

Place the chips in a medium to large size bowl. Microwave on 50% for 1-2 minutes or until mostly melted.

Stir in the peanut until smooth.

Add other ingredients and stir until well coated.

Drop by spoonfuls onto the prepared pans.

Cool in the refrigerator for 10-20 minutes.

Enjoy!

(‘Cooked’ version)

Cooked Haystacks aka Noodle Cookies

Ingredients:

  • 11-12 oz bag butterscotch chips (you can also use semi-sweet chocolate chips)
  • 1 14-oz can sweetened condensed milk
  • 1 3-oz can Chow Mein Noodles
  • 1/2 – 1 c. Salted peanuts or almonds, optional

Directions:

Line two baking pans with wax paper.

In a heavy saucepan, over low heat, melt the chips with the sweetened condensed milk.

Remove from heat.

In a large bowl, combine the noodles and nuts.

Stir in the melted chip mixture until evenly coated.

Drop by spoonfuls onto the prepared pans.

Cool in the refrigerator for 10-20 minutes.

Enjoy!

Feeling The Pain of Undecorating…

Well yesterday went better than I thought it would in some ways. The kids were motivated to help clean up the house as they wanted me to help them open, assemble, and set up some of their new toys.

In 2 hours we had the tree down (I don’t usually take it down so early but it was taking up some prime space in our little house on the pond) and all the decorations put away on the newly reorganized porch. We also had 2 loads of laundry done up and a third in the washer. The kitchen had made good progress as well.

As the kids went down for quiet time I played catch up on some emails, updated some posts on Kirby’s Koupons, and finished the laundry. Well this morning it seems I was a bit overzealous in my attack on the house and I am feeling it in every little joint and muscle. Big time fibro flare… gotta love it.

So while I was stumbling around in the kitchen trying to fix a cup of coffee and find some ibuprofen Jacob came in. He told me it was Wednesday and wanted to know what kind of muffins we were going to have. (Gotta love the fact that the four year is reading the calendar and telling time on his new watch.)
