I first tasted this when I was heavily pregnant with one of my younger two… I fell in love and had to beg for the recipe. It’s a good thing they couldn’t turn down a desperate pregnant Momma-to-be!

Life Update: A Cross-Country Move, House News, and A Question
I want to thank everyone who said a little prayer and kept my daughter and son-in-law in their thoughts this past week as they were traveling across the country to their new home… at least it will be for the next couple of years until they are stationed elsewhere. I miss them so much already but I am so happy to report that they made it safely with almost everything they had tied on the back of their truck… the vacuum cleaner was not so fortunate. They are working on getting settled in and preparing to have their first Christmas away from family… I am so proud but it makes me sad too! Potato Cakes
Need an idea to use up some of the leftovers after Thanksgiving? Have you ever tried potato cakes? These are a favorite in our house and we have them whenever we have a pile of leftover Mashed Potatoes. These can be adapted to incorporated a variety of leftovers so clean out that fridge and see what you can find to make up a batch of these.
Spinach Dip
I love this stuff and when I was pregnant I would crave it… I always kept a batch made up. This is truly a recipe the kids can make by themselves!
This is super easy to make and tastes great with EVERYTHING! We have used it for veggies, chips, and crackers. You could probably add a bit of chopped red bell pepper to make it a little more festive. Continue reading “Spinach Dip”
