Sopapillas

My kids just love saying this, Sopapillas (Soap-ah-Pee-yas)! These are so easy to make and can be eaten plain, with the cinnamon and sugar mixture, or topped w/whipped cream and strawberry preserves.

Chili Dog Casserole

My family absolutely loves this recipe and it is one of their all-time favorites. It is also super simple and the kids can help with it.

We have begun to make this a little bit different as we just put the hotdogs into hotdog buns, instead of tortillas, and then spread the chili sauce on top and sprinkle with cheese before baking. Mr. Awesome is not crazy about the tortilla version so we decided to give it a try this way and it was a WINNER! Mexican Tortilla Skillet

This meal, along with many of the other meals that use hamburger, comes together really quickly if you brown your hamburger when you bring it home from the store. I usually buy several pounds and divide it up into 1lb sections, then brown it and freeze it for later.
