Easy Crockpot Apple Butter

I don’t post a lot of ‘canning’ recipes on here because most of what I know about canning is in my head. I just do things the way I saw them done when I was young and I can’t really guarantee the accuracy of all of them.

This recipe here is a good one for canning and giving out as gifts though. It never seems to stick around that long here though because my kids LOVE Apple Butter and I love that I know exactly what’s in it. The longer you let this cook the thicker it gets… we like it THICK so we always let it cook just a tad bit longer.

I haven’t tried using anything other than sugar to sweeten this with but I think it would probably be ok to give it a go. This also freezes well if you don’t want to can it.

If you decide to use this for Apple Butter you may want to omit the sugar and seasonings.

Life Update: A Cross-Country Move, House News, and A Question

I want to thank everyone who said a little prayer and kept my daughter and son-in-law in their thoughts this past week as they were traveling across the country to their new home… at least it will be for the next couple of years until they are stationed elsewhere. I miss them so much already but I am so happy to report that they made it safely with almost everything they had tied on the back of their truck… the vacuum cleaner was not so fortunate. They are working on getting settled in and preparing to have their first Christmas away from family… I am so proud but it makes me sad too! What do you do when life gives you dirt?

You grab a couple of friends, a couple of dump trucks, and you play in it… of course! Well, that’s what our kiddos did over the weekend. We did get a total of 12 loads of dirt for the new house but no house yet. Even though they said they would try to have it here by Thanksgiving.

The piles were just too tempting and the kids kept begging to play so we decided to let them make some fun memories. The dog had to have a chance to play as well so I’m not sure who had more fun… lol.  Everyone had to have a bath after they played because they were covered in red clay and we had an orange dog but they had a blast!

Here are some pics to enjoy from that day:

Potato Cakes

Need an idea to use up some of the leftovers after Thanksgiving? Have you ever tried potato cakes? These are a favorite in our house and we have them whenever we have a pile of leftover Mashed Potatoes. These can be adapted to incorporated a variety of leftovers so clean out that fridge and see what you can find to make up a batch of these.
