Getting Ready for the Holidays Weeks 1 & 2

Is it ever too early to think about Christmas? Probably not, especially when you consider all of the extra things that happen during that busy season. We just got everything decorated for Fall… I think this might be the first year we have really decorated this house as I kept waiting until we had everything ‘just right’ but who knows when that will be, so we might as well try to make things a little nicer today.

Creamy Cabbage and Sausage

This dish is so unbelievably good and it’s easy and quick to make as well. I made it in the crockpot but it could come together quickly in a skillet as well. I had originally had Kielbasa and potatoes on my menu but I wanted to change it to something that Mr. Awesome and I could eat on our ‘diet’… this was the perfect dish to replace our old favorite!

I didn’t get any pictures as it just didn’t last long enough to take pictures. We ate this with a pot of ‘Get Methylating Soup‘ (lentils), riced cauliflower, and some fresh-picked Rosella greens… yum! I think the next time I might make some veggies other than the soup though. Fried potatoes and macaroni-n-cheese go really well with this dish.

Hubby Approved Surprise Salted Caramel Cupcakes

I’ve made this recipe several times now, the first time being at Sweet Shyanne’s 2nd birthday party, and people have not stopped talking about them!

Mr. Awesome has jumped on the keto/THM bandwagon and has been asking for these again and again… the kids beg for them as well so I guess I just need to start making a double batch of them. The first time I saw these cupcakes mentioned was in the Trim Healthy Table cookbook and I thought some silly thoughts about the ‘surprise’ ingredient but I’m so glad I decided to give them a try and I think you will be too!

Eggs, Milk, and Coffee (Update pics!)

What do eggs, milk, and coffee have in common? Well, they can all be used for a variety of things and we often have them on our grocery list but right now they are also on my morning chores list. (Hopefully, 2 of the 3 will soon be off the grocery list.)
