Momma’s Blackberry Cobbler

I was in a baking kinda mood on the 4th of July and decided to make a couple of different desserts. This was one of them as it is so easy to make. I hadn’t made one in a while so I had forgotten how good they make the house smell too.

I mixed the berries up and let them sit about 30 minutes or so to blend well. I used that time to make up a Lemon Meringue Pie and a Nanny’s No Bake Coconut Cream Pie. All three of these were super easy to make and so good to eat.  Continue reading “Momma’s Blackberry Cobbler” →

Quick and Easy Burrito Casserole

This is a recipe that I’ve had for a while and I’ve tweaked it a bit here and there to get it to our liking. I’ve actually had it on the menu plan for the past couple of weeks but haven’t been able to make it as we’ve just had some hectic schedules here lately.

You can call the kids in to help with this one. My littles like to tear up the tortillas and sprinkle on the cheese while the girls like helping to stir the meat and bean mixture and spread the sour cream. Earthquake Cake

This is a dessert I’ve had a couple of times since I started square dancing. I love it… I mean it’s full of rich chocolatey goodness and layered on top of coconut and pecans… yum! Don’t plan on bringing home leftovers if you take this to a potluck though.

Nanny J’s Carrot Souffle

This was one of the new recipes we had for Thanksgiving. It was really quite delicious and if you have picky eaters that don’t like carrots you may want to give this a try. Mr. Awesome doesn’t like carrots but he was the one who requested this.
