July 23 – 29, 2017 Meal Plan

This is our basic meal plan for the week. Sometimes we will switch the days around if I forgot to set something out or put something in the crock pot. Please feel free to use this or change it around to suit your family’s needs.

I have started trying to do easier meals on days that I have square dancing obligations. This helps me to be able to put a nice meal on the table without feeling guilty about having some much needed ‘Mommy Time’. Some of these meals may also help with those that have busy or irregular schedules due to work or extracurricular activities.

I do have ‘Snacks/Desserts’ listed as well. I always try to keep a bowl of fresh fruit out on the counter or table for the kids to snack on. Sometimes I will make a special snack or treat for us to enjoy.

Sunday 

Breakfast:

Banana Crumb Muffins, scrambled eggs

Lunch:

leftovers

Dinner: ++

Oven BBQ Chicken, Baked Beans, Potato Salad

Snacks/Desserts:

Cinnamon Toast


Monday

Breakfast:

Cereal/Oatmeal

Lunch:

Grilled Cheese, veggies

Dinner: ++

Briarpatch Casserole, Salad

**(This is a fairly quick meal to put together as Momma has a class/dance in the evening)

Snacks/Desserts:

Cookies (** I will try to make a few extra to take along for refreshments at the dance.)


Tuesday

Breakfast:

French Toast

Lunch:

Tuna Salad, Veggies

Dinner: ++

Spicy Chicken and BowtiesSalad

Wednesday

++I have a few kids who seem to be going through growth spurts right now and are always HUNGRY. I have been keeping a pot of beans, blackeyed peas, or other vegetable as a side. I also have been buying a few extra snacks like fruit, veggies, yogurt, etc.

Special Holiday Meals: Amelia Earhart Day

Amelia Earhart Day is the day we honor one of the greatest aviators! Click here to learn more about this holiday. It is celebrated on July 24th.

According to many sources, her flight dinners had to be quick, nourishing, and easy to eat. She also really liked tomato juice as a beverage to sustain her.

Chicken Cordon Casserole

This is one of those recipes that takes me a little bit longer to put together so we don’t have it as often as some of the other recipes. It is also a bit more expensive to make so it is a treat when we do have it.

Chicken Cordon Casserole

Ingredients:

  • 4-5 boneless, skinless chicken breasts, thinly sliced
  • 10 – 12  slices of ham
  • 10 – 12 slices of Swiss cheese
  • 1 t. black pepper
  • 1t. salt
  • 1/2 c. butter or margarine
  • 1/2 c. flour
  • 1 c. chicken broth
  • 3 T. Dijon Mustard
  • 2 c. crackers, crushed
  • 1/3 c. Parmesan cheese, grated
  • 1 T. garlic powder
  • 1 T. onion powder
  • 1 T. parsley
  • 1/3 c. butter or margarine, melted

Directions:

Preheat your oven to 350.

Grease a 9 x 13 casserole dish.

In a medium saucepan over medium heat, melt the butter or margarine and whisk in the flour until well combined.

Slowly add the chicken broth making sure to stir well.

When the sauce starts to thicken add the mustard, salt, and pepper.  Stir and remove from heat.

Mix the Parmesan cheese, crackers, garlic powder, onion powder, and parsley. Set to the side.

Pour a small amount of the sauce on the bottom of the pan.

Place the chicken in the bottom of the pan and season with salt and pepper, as desired.

Drizzle the chicken with the sauce.

Place the ham slices in a layer over the chicken.

Then layer the Swiss cheese.

Spread the sauce over the cheese.

Sprinkle on the cracker and cheese mixture.

Drizzle with melted butter.

Bake for 40 – 45 minutes, until the chicken is cooked and the topping has browned.

Special Holiday Meals: National Ice Cream Day

National Ice Cream Day is the perfect day to pull out that old ice cream maker and make a batch of homemade ice cream! Click here to learn more about this holiday. It is celebrated on July 13th.

This might also be a nice day to plan an ‘Ice Cream Social’, where your friends and family can have an ice cream-making competition. Have everyone bring their favorite ice cream toppings, and everyone can make a different flavor too! We had this every year before school started when my older kids were little, and it was SO MUCH FUN!! We also had their birthday parties together at this time… knocking out a few ‘birds’ at a time!
