Special Holiday Meals: Abraham Lincoln’s Birthday Meal

While Abraham Lincoln may have had many favorite foods, this is a menu that we came up with to make this day a little extra special, as he was an important part of our history. He was a simple man who preferred water over any other beverage, and it is said that he often had to be reminded to eat. I think my family history can also be traced back to him at some point.

Abraham Lincoln’s Birthday Menu 

Dinner 

Oyster Stew w/crackers ** or Chicken Fricassee 

Roast Pork Loin or Pork Chops 

Sweet Potato CasseroleCreamed Spinach 

Hoe Cakes or Biscuits 

Dessert 

Apple Crisp or Apple Pie w/vanilla ice cream 

Or Vanilla Almond Cake 

**We will be having Potato Soup in place of the Oyster Stew as we have a couple of people with seafood allergies. 


Recipes of the Month: February 2026

I will try to post a few recipes that should be fairly budget-friendly and easy to make for anyone wanting to learn to make things from scratch.

This month is full of special holidays, but I thought I’d start with Groundhog Day on February 2nd.

We usually make a Woodchuck Pie, also known as a Shepherd’s Pie, and we have some of Phil’s Poppers on the side. There are a ton of variations to sides that you could make with this, but these are family favorites. Then for dessert we make dirt cakes with Nutter Butter ‘Groundhogs’… so cute.

You can also find recipes for fruit pizza, which has a graham cracker crust, cream cheese ‘sauce’, fresh fruit slices, and then a simple glaze drizzled over… so yummy! I can’t find my recipe, but I do try to make this from time to time.

Choose PEACE

As we wrap up this month long journey of focusing on PEACE, I want to remind you that PEACE is a choice.

A choice to trust GOD and HIS promises. A choice to believe that HE loves us and HE has a plan for us.

By making the choice to hand our lives over to HIM we will find PEACE.

What are you waiting for? Start trusting in HIM and living in PEACE.

Take a moment to close your eyes, take a deep breath, and reflect on all that GOD has done for you.

Now ask yourself what HE is telling you to do… maybe you’ve been ignoring something you’ve been called to do.

You aren’t stuck unless you stop… GOD will nudge you into the way you should go. One step at a time and you will find that PEACE that your soul is craving.

Step out in FAITH and TRUST that HE will meet you where you are right now.

Seasonal Food Preservation Guide

Many of us drool over the beautifully crafted pantries we see on Pinterest or Instagram. They have neatly arranged shelves lined with beautiful canned goods. This doesn’t happen by accident… those jars of proof of lots of hard work that went into growing and preserving each of their contents.

I did a lot of preserving many years ago. I had a garage with custom-built shelves to display our garden’s abundance, but my situation is different now. We dream of a pantry with beautifully stocked shelves, but it hasn’t quite happened yet. I can’t build the pantry today, but I can work on getting some jars filled with delicious food to nourish my family.
