I have to smile at the title to the this post. This was a very good day and probably one of the most enjoyable days I’ve had in a very long time!

For those of you who don’t know what ‘yellow rocking’ is, it is a square dance call where the dancers will hug another dancer, usually their corner. What/who is a corner? For me it would be the person standing to my right. Continue reading “No yellow rocking at the checkout!”

March 12- 18, 2017 Meal Plan

This is our basic meal plan for the week. Sometimes we will switch the days around if I forgot to set something out or put something in the crock pot. Please feel free to use this or change it around to suit your family’s needs.

I have started trying to do easier meals on days that I have square dancing obligations. This helps me to be able to put a nice meal on the table without feeling guilty about having some much needed ‘Mommy Time’. Some of these meals may also help with those that have busy or irregular schedules due to work or extracurricular activities.

I do have ‘Snacks/Desserts’ listed as well. I always try to keep a bowl of fresh fruit out on the counter or table for the kids to snack on. Sometimes I will make a special snack or treat for us to enjoy.

Eggplant Parmesan

I don’t know about you but the first time I heard the name of this recipe I thought it was gonna be way to complicated for me. In fact, this is a very simple recipe that also tastes delicious. It’s a great way to introduce the kids to new veggies too. Continue reading “Eggplant Parmesan”

Grandma’s Mac N Cheese w/low carb alternative

Now I do confess that in years past I used boxed macaroni and cheese a lot because:

  1. it’s cheap
  2. it’s easy
  3. I was too tired to make the real deal

However, I did try to make this recipe every so often and on special occasions and/or holidays. You can add a little ham or meat to make this a hearty main dish!

Things have changed over the years and we rarely buy the boxed stuff anymore at all. We’ve even adapted this for our low-carb eating and that recipe is below.

Easy Tartar Sauce

We don’t use a lot of tartar sauce but it is requested every now and then. My kids like to eat it when they have fish sticks.

This recipe is so simple and I usually have all of the ingredients on hand. You can also add minced onion and seasonings to it to make it suit your tastes. Continue reading “Easy Tartar Sauce”
