Creative Ways to Use Leftovers

We don’t like to clean out the fridge because sometimes we find things that have been forgotten about. I’ve tried to leave a few ‘FREE CHOICE’ and ‘PANTRY CHALLENGE‘ days on our Menu so that we waste less… actually nothing truly gets wasted as any old food will go ot the chickens or the compost pile.

Most of the time, our ‘leftovers’ become lunch for the next day. We will often portion them out in individual containers so people can choose their meal.

If we have some veggies that look a little sad, I will often chop them and put them in the freezer. We will freeze extra meats as well, for later use.

November 15th is National Clean Out Your Fridge Day … probably so you can make room for all of those Thanksgiving goodies! Some of these recipes can help you use up some of those Turkey Day Leftovers as well.

Mini Garden Makeover and Fall Reset

How are you doing? I’m praying all is well… everyone here is good. We’ve really enjoyed having a week of reflecting on our blessings, and eating outside was a hit with the weather being just right. We will definitely be observing Sukkot in the future and plan to make a few small changes in the future.

This week, we are taking a breather from school for ‘Life Skills’ as the gardens need a little attention and revamping. I’ve had a vision for part of the garden, and we’ve been working on making it a reality. We haven’t had to buy any materials as we have been repurposing some things that we already had on hand. I am contemplating the purchase of some fencing for the garden, but seeing it come together makes me second-guess that idea.

You may remember the Pallet Gate project that we did a bit ago… this is another baby step towards the goal! We put together a small raised bed just enough to allow the guys an edge to weed eat and maybe save my chives… lol.

Granny’s Ambrosia

This recipe is so good, and we miss having dinners at the square dances because someone would always bring this dish with their own variations… YUMMY!

Granny’s Ambrosia

Ingredients:

Equal amounts of:

  • Mandarin oranges (1 can)
  • Pineapple chunks or tidbits (1 can)
  • ½ c. sour cream or Greek Yogurt
  • 8 oz of Cool Whip or other whipped topping
  • Mini marshmallows (1 cup)

optional add- ins:

  • Shredded coconut (1 cup)
  • Pecans, chopped (1 cup)
  • Fresh or canned fruits, chopped (1 cup each) ex: bananas, apples, peaches, pears, strawberries, grapes, etc.
  • Maraschino cherries, chopped (1 small jar)
  • Small box of vanilla pudding

Directions:

Drain cans of fruit and dump into a large bowl… save the juice for your kids, if they like that.

Add any optional additions.

Mix the sour cream and whipped topping together, gently stir into the fruit.

Cover and refrigerate for at least two hours.
